What is the difference between Compound and Couverture chocolates?
There are 2 common types of chocolates in the market. Do you know the difference between coverture and compound?

Couverture Chocolates:
Couverture chocolate is a very high-quality chocolate that contains a higher percentage of cocoa butter. 31 percent is just the minimum amount and some couverture chocolates may contain up to 39 percent cocoa butter. couverture chocolate is often referred to as "real chocolate".
- Couveture chocolates are made from Cocoa Beans and Cocoa Butter
- No preservative or flavours are added during the process
- Because of these couverture chocolates are expensive.
Compound Chocolates:
Compound chocolate is made up of cocoa powder and oil (Veg, palm kernel or soybean). While these ingredients make for a more inferior chocolate, they also make the chocolate a lot easier to work with. Compound chocolate doesn't require tempering to use and will still set just fine after having been melted. It will lack the the crisp texture and nice shine of couverture chocolate. Due to being made from less expensive ingredients, compound chocolate are often very cheap
Compound Chocolate: Compound chocolate substitutes the two main ingredients found in real chocolate. Instead of chocolate liquor, it has cocoa powder, and replaces cocoa butter with an oil.
